Curried Carrot Salad


6 large carrots, grated
1 tsp curry (choose your favorite powder)
1/2 cup raisins
Big pinch of cumin
1 tbsp oil (or butter)
Chopped nuts (optional)


  1. Heat oil/butter in a pan over medium heat.
  2. Add curry, cumin, salt/pepper to taste and nuts.
  3. Sauté 1 minute, add carrots and raisins, sauté for 3 minutes, remove from heat.
  4. Serve hot or let cool and store in refrigerator and serve cold.
