Cucumbers with Scallions & Chili Oil


1 pound painted serpent cucumbers, chopped in ½-inch chunks

1 teaspoon salt, plus more

4 scallions, thinly sliced

3 tablespoons unseasoned rice vinegar

1 teaspoon sesame seeds, toasted

Chili oil


  1. Place cucumbers in a colander; toss with 1 teaspoon salt. Let sit for 10 minutes to drain excess liquid.
  2. Transfer cucumbers to a medium bowl and toss with scallions, rice vinegar, and sesame seeds. Taste and adjust seasoning with salt. Drizzle with chili oil.
