This recipe is a personal invention, so these measurements may (and probably should) need to be adjusted. It makes for a delicious experiment though!
Ingredients:
Galia melon
2-3 medium cucumbers
2 TBSP fresh ginger
basil
Directions:
Cut up one very ripe Galia melon (Full Belly Farm sells them at the co-op and they are delish!) and put it in a bowl.
Peel strips from the skin of 2-3 medium cucumbers, cut in half lengthwise, remove seeds, and chop into bite sized pieces. Try an angled cut for aesthetics.
Mince 2 TBSP of fresh ginger and a healthy dose of fresh basil.
Mix it all in the bowl and enjoy!
