Asian Cucumber & Carrot Salad


2 large cucumbers

3 large carrots

1 tablespoon fresh ginger, grated

2 tablespoons rice vinegar

Juice of 1 lime

2 tablespoons honey

2 teaspoons toasted sesame oil

1 teaspoon salt

1 teaspoon red pepper flakes

4 scallions, chopped

1 teaspoon toasted sesame seeds, plus more for topping


  1. Spiralize the cucumbers and carrots. If you don’t have a spiralizer, cut into thin slices. Place into a large bowl.
  2. In a small bowl, combine ginger, rice vinegar, lime juice, honey, toasted sesame oil, salt, red pepper flakes, scallions, and sesame seeds. Pour mixture over the cucumbers and carrots. Mix together well.
  3. Enjoy right away or let sit in the refrigerator for 20 minutes to let flavors mix together.
  4. Mix well before serving. Top with more sesame seeds, and dressing from the bowl, if desired. Serve and enjoy!
