Cucumber & Avocado Salad


3 tablespoons olive oil

2 tablespoons balsamic vinegar

2 garlic cloves, minced

Sea salt and pepper to taste

1 avocado, diced

2 slicer or painted serpent cucumbers, thinly sliced

½ cup cherry tomatoes, halved

Fresh basil leaves, thinly sliced


  1. In a medium bowl, whisk together the olive oil, balsamic vinegar and garlic until blended. Season with salt and pepper.
  2. Add the avocado, cucumbers, cherry tomatoes and basil to the bowl and gently toss to combine. Season with additional salt and pepper if necessary. Serve immediately.
