Citrus & Watermelon Radish Salad


1 shallot, minced
2-3 tablespoons white or golden balsamic vinegar
2 watermelon radishes, very thinly sliced
3 citrus fruits (Navel orange, grapefruit, blood orange and/or ruby red grapefruit)
¼ cup pistachios, chopped
¼ cup goat cheese, crumbled
3 tablespoons fresh chives, minced


  1. Place minced shallots in a bowl with the vinegar and add a pinch of salt. Set aside.
  2. Arrange the radish slices on a platter and season lightly with salt.
  3. Cut off the end of each citrus fruit and squeeze some over the radishes, then discard. Remove the rest of the peel from the citrus. Cut in between the membranes to remove each slice. Squeeze the remaining membrane all over the radishes. Scatter citrus segments over the radishes.
  4. Scatter the pistachios and goat cheese over the radishes and citrus. Pour the macerated shallots and vinegar over the top.
  5. Top with chives and let sit a few minutes before serving.
