Cilantro Ginger Pesto


2 bunches cilantro, ends trimmed off and bunches roughly chopped
1 inch fresh ginger, peeled and chopped
4 cloves garlic, peeled
1 shallot, peeled and chopped
1 tablespoon Thai Kitchen red curry paste
¼ cup sunflower seeds
2-4 tablespoons sesame oil
1-2 limes, juiced
salt to taste


  1. Add all ingredients in a food processor, starting with 2 tablespoons sesame oil and 1 lime. Blend until smooth. Add remaining sesame oil and lime juice if the consistency is too thick. Add salt to taste.
  2. Add a dollop to soups, top over baked fish or toss with roasted vegetables.
