Chard Pie

Ingredients:

1 bunch chard/beet greens
1.5 cups cooked rice/quinoa/millet
3 eggs
1 cup shredded cheddar cheese

Directions:

  1. Cut up chard and beet greens and sauté or steam then drain any extra liquid
  2. Take your cooked grain and mix with 1 egg , 1/4 cup cheese, and salt and pepper if desired. Press this into a greased pie plate like a crust.
  3. Mix the cooked greens (and any other cooked veggie you want), 2 eggs, 3/4 cup cheese, and salt and pepper. Pour greens mix into pie plate.
  4. Bake at 375 degrees for about 45 minutes or until it is bubbly and the top is browned.
  5. You can also sprinkle pumpkin seeds on top before baking.Cut like pie and enjoy for breakfast, lunch or dinner!

*Don’t be afraid to stray from the recipe. Try your favorite cheeses, feta and mozzarella are also delicious in this dish, and you can also use your favorite greens or whatever is around. Spinach is also really great in this recipe and you can add some of just about any cooked vegetable, potatoes, broccoli, cabbage, carrots, beets.
