Stir-Fried Chard & Peppers

Ingredients:

1 bunch chard
1 tablespoon canola oil or other high smoke point oil
1 tablespoon toasted sesame oil
1 basket seasoning peppers (Aji Dulce, Habanada, and Mad Hatter peppers-don’t worry they are not spicy!), sliced
1 onion, sliced
1 tablespoon fresh ginger, grated
6 garlic cloves, thinly sliced

Directions:

  1. Remove chard stems. Choose 4 – 5 stems and chop. Roughly chop leaves. Set aside.
  2. Heat the canola and sesame oil in a large sauté pan on high heat. Add the chopped chard stems, peppers, onion, ginger, and garlic and cook, stirring occasionally, until lightly browned; about 4 -5 minutes
  3. Lower the heat and add the chard leaves. Stir to coat with the oil in the pan. Cook only until the chard leaves has wilted, 4–5 minutes.
