Carrot, Zucchini, Squash Ribbons


2 large carrots, peeled
3 zucchini
3 yellow summer squash
2 tablespoons butter
4 cloves garlic, minced
2 tablespoons fresh parsley, minced
2 tablespoons fresh basil, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 lime, juiced
2 tablespoons parmesan cheese, grated


  1. Cut carrots, zucchini, and squash into thin ribbons with a mandoline slicer.
  2. In a large skillet, melt butter over medium-high heat.
  3. Add garlic and cook for 2 minutes. Add carrot ribbons.
  4. Toss in zucchini and squash ribbons, salt, pepper, parsley, basil, and lime juice.
  5. Cook for 6 to 10 minutes.
  6. Turn off heat and sprinkle with cheese.

Serve and enjoy!
