Carrot & Pepper Slaw


2 tablespoons white wine vinegar
2 tablespoons olive oil
1 ½ tablespoons sugar
Juice from 1 lime
¼ teaspoon crushed red pepper flakes
¼ teaspoon ground cumin
1 ½ teaspoons salt
¼ teaspoon freshly ground black pepper

2 cups cups carrot, julienne, matchstick, or coarsely shredded
2 cups sweet peppers, seeded and thinly sliced
1 medium jalapeño pepper, deseeded and minced
3 scallions, chopped
½ cup cilantro
¼ cup pumpkin seeds, toasted


  1. In a large bowl, whisk together all ingredients for the dressing.
  2. Add the carrots, sweet pepper, jalapeño, and scallions to the bowl and toss to coat. Cover with plastic wrap and chill 1 hour before serving, tossing occasionally.
  3. Stir in cilantro and top with pumpkin seeds just before serving.
