Red Cabbage, Fennel & Grapefruit Salad


1/4 cup pumpkin seeds
1/2 red cabbage, shredded
3 grapefruits, segmented (pits, peel, and pith removed)
1 bulb fennel, cored and thinly sliced
2 large scallions, diced
1/4 cup golden raisins

1 1/2 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice (about 1 lemon)
1/2 teaspoon sea salt
Pepper to taste


  1. Toast pumpkin seeds in a dry skillet until golden. Toss with salt and set aside to cool.
  2. Place salad ingredients in a large mixing bowl. Add dressing ingredients and toss well to mix. Top with pumpkin seeds.
