Buttered Salad Roots with Eggs Your Way

Serves 1

Ingredients:

1 bunch salad roots (salad turnips or radishes), tops and roots removed and sliced in half lengthwise

1 tablespoon unsalted butter (good quality really makes the difference!)

3 scallions, diced

½ teaspoon fresh thyme, minced

Pinch of sea salt and pepper

Pinch of red pepper flakes

1 egg

1 piece of bread or bagel, toasted

Directions:

  1. In a skillet, heat butter over medium low heat. Add in scallions and let cook until beginning to soften, 2-3 minutes.
  2. Add the radishes, thyme, salt, pepper and red pepper flakes. Cover and let cook, stirring once or twice, until radishes are just tender, 5-6 minutes. Taste and adjust seasoning if needed.
  3. While radishes are going, cook your egg how you desire, scrambled, fried or poached. If you desire a hard boiled egg, cook before radish mixture.
  4. To serve, place toast or bagel on a plate, add radish mixture, and top with egg.
