Butter Lettuce Salad with Fresh Herbs


1 head Butter lettuce, leaves separated
2 scallions, chopped
1 orange, segmented
¼ cup fresh parsley, coarsely chopped
1 tablespoon fresh tarragon, coarsely chopped
3 tablespoons olive oil
1 tablespoon white wine vinegar
1 tablespoon water
Salt and freshly ground pepper to taste
Additional toppings options: toasted walnuts, goat cheese, avocado


  1. Place all ingredients, except lettuce, into a blender. Blend until puréed.
  2. Arrange lettuce leaves on serving plates and drizzle vinaigrette over leaves.
  3. Top with additional ingredients if desired.
