Broccoli Soup


2 tablespoons olive oil
1 onion
2 carrots, peeled and chopped
2 cups potatoes, peeled and cubed
4 cups broccoli
Enough vegetable broth to cover veggies
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon pepper


  1. Heat oil in a large pot and sauté onion and carrot for about 5 minutes.
  2. Add potatoes and broccoli. Add vegetable stock so all the ingredients are submerged. Add the salt, pepper, and cumin. Simmer for 20 minutes.
  3. Puree in a food processor or use an immersion blender to puree
