Bok Choy and Heirloom Tomato Salad


6-8 baby bok choy, chopped
2 large heirloom tomatoes, sliced into wedges
1 red onion, finely diced

3 cloves garlic, minced
1 hot pepper, seeded and minced
2 tablespoons ginger, minced
1/4 cup basil, chopped
2 tablespoons olive oil
2 tablespoons rice vinegar
Salt and pepper
Sugar or honey
Sunflower and/or sesame seeds to garnish


  1. Add the bok choy, tomatoes and red onion in a bowl and gently mix.
  2. Combine the dressing ingredients to a jar, cover with a lid and shake. Season with salt and pepper, and a pinch of sugar or drop of honey to balance for sweetness. Shake again and pour over salad. Toss gently to mix.
  3. Serve salad room temp with a seed garnish.
