Stir Fried Baby Bok Choy with Ginger and Scallions


3 baby bok choy, cut into halves, quartered , or left whole depending on size
2 T. julienned ginger
4 scallions, minced
Coconut oil
Sea salt and pepper
Toasted sesame seeds


  1. In a wok, heat about 1T. of oil and add the scallions. Then add the Bok Choy. Stir fry until just wilted and bright green. Add the ginger.
  2. Taste for salt. Garnish with sesame seeds and more scallions.
