Black Bean Burgers

This recipe starts with soaking your black beans overnight (rinsing the water at least once) and cooking the beans until tender.

Ingredients:

2 cups dry black beans soaked, cooked, and drained
In a food processor (or with a cheese grater or knife) shred
1 large carrot
1/2 cup onions
1 clove garlic

Directions:

  1. Take mixture out and mash the beans in the food processor or with a potato masher or fork with 1/4 cup oil
  2. Put all ingredients in a large bowl and mix in 1/4 cup four and 1/4 cup oats
  3. Salt, pepper, and spice to taste. I like cumin and a little fennel seed.
  4. Mix and mash with your clean hands and form into balls and then patties. You can fry, bake or barbecue.
  5. Make sure to use a smaller grate on the barbecue or the burgers may fall through.
  6. Top with tomatoes, lettuce, cheese, onions and enjoy with a cucumber, tomato, basil, olive oil, salt and pepper salad.
