Beets with Goat Cheese

Ingredients:

Beets
shallot
red onion
sugar
balsamic vinegar
lemon juice
olive oil
fresh dill
goat cheese

Directions:

  1. Place unpeeled beets without greens (1 bunch) in a pan with about 1” water and cover with aluminum foil.
  2. Roast at 375 until tender, easily pierced with a fork (40-60 minutes). Then peel and cut them into wedges.
  3. In a bowl, toss with 2 shallots or ½ red onion, 1 tsp sugar, salt, 1 tbsp balsamic vinegar, juice of ½ lemon, 1 tbsp olive oil, fresh dill.
  4. Top with crumbled goat cheese.
