Roasted Beets & Apples with Pistachio Nuts


2 beets, peeled and thinly sliced
2 apples, cut into 1/2-inch wedges
1/2 Walla Walla onion, thinly sliced
2 teaspoons honey
1tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper to taste
1/4 cup salted pistachio nuts, chopped


  1. In a bowl, whisk together honey, olive oil, mustard, lemon juice, salt, and pepper. Toss beets, apple, and onion with honey mixture.
  2. Place beets in a casserole dish and bake in a preheated 375 degree oven for 15 minutes.
  3. Add onion and bake for an additional 20 minutes.
  4. Add apple and bake for 10-15 minutes longer (depending on how soft they are).
  5. Let cool slightly and season with salt and pepper. Top with pistachio nuts. Enjoy!
