Beet Burgers

Note: this makes about six large burgers – reduce the recipe as needed


Combine in a large bowl:
2 cups grated beets
2 cups grated carrots
1 cup cooked brown rice
1 cup grated cheddar cheese
1 cup toasted sunflower seeds
2 eggs
½ cup sesame seeds
1 medium onion, finely chopped
¼ cup olive oil
3 tbsp flour
3 tbsp parsley (or summer savory perhaps)
2-4 garlic cloves, finely chopped
2 tbsp soy sauce


  1. Form into patties and bake at 350 on a greased cookie sheet for 25-30 minutes, until firm and veggies cooked through.
  2. Serve as you would a burger.
