Bean Soup

Ingredients:

2 cups dry beans
2 oz. sundried tomatoes
1-3 dried cayenne peppers, depending on how spicy you like it
Herbs-thyme, oregano, rosemary
1 Rutabaga
Greens (as many as you like)
Salt and pepper amd cumin and coriander to taste
Butter or olive oil

Directions:

  1. Start by soaking the beans overnight in 6 cups water.
  2. When you’re ready to make the soup, drain the beans and put them in a pot with 8 cups of cold water, sundried tomatoes, herbs, and cayenne peppers.
  3. Cook until beans are tender- about and hour and a half.
  4. Once beans are fully cooked, dice the rutabaga and saute in butter until golden brown and tender.
  5. Add the rutabaga and fresh greens to the soup along with salt, pepper, and seasoning.
  6. This soup will nourish you and prevent any winter blues, and is even better the next day!

Variations:
*Blend half or all of the beans before adding your rutabaga and greens.
*Add a few tablespoons of maple syrup and a tablespoon of soy sauce for an even more savory treat!
