1/3 cup balsamic vinegar
1 teaspoon fresh rosemary, minced
1/2 teaspoon fresh thyme, minced (optional)
1 clove garlic, minced
3 medium beets, sliced into 1/4 inch rounds
Salt and pepper to taste
Directions:
In a medium bowl, mix balsamic vinegar, rosemary, thyme(optional) and garlic.
Place beets in the mixture, and marinate at least 20 minutes.
Preheat an outdoor grill for high heat, and lightly oil grate.
Place beets directly on grill grate and grill for 8-10 minutes on each side until tender.
Remove from grill and season with salt and pepper.
