1 large (3½ lbs) butternut squash, peeled and cut into 1 inch cubes
¼ cup fruity olive oil, or more if needed
2 garlic cloves, minced
2 Tbs. minced fresh parsley
Salt to taste
Liberal seasoning of ground black pepper
1/3 cup grated Parmesan
Directions:
Preheat the oven to 400 degrees.
In a large bowl, toss together the squash, olive oil, garlic, parsley, salt, and pepper.
Spoon vegetables into a 12x7x2-inch dish or another shallow 2 ½ quart baking dish.
Sprinkle on the Parmesan and bake for 1 hour, or until the squash is tender, not mushy.
