Sautéed Asparagus & Cherry Tomatoes with White Beans


2 tablespoons olive oil
1 bunch of asparagus, thick ends snapped off and sliced into ½-inch pieces
4 green garlic bulbs, sliced
Salt & pepper
1 cup cherry tomatoes, halved
1 can white beans, rinsed and drained
Juice of 1 lemon
4 scallions, sliced
Shredded parmesan cheese (optional)


  1. Add olive oil to a large skillet over medium heat. Add the sliced asparagus and green garlic and sprinkle with salt and pepper. Sauté for 2 minutes.
  2. Add the cherry tomatoes, white beans and lemon juice and cook until tomatoes have softened and beans are warm, about 2-3 minutes.
  3. Turn off the heat, add the sliced scallion and adjust taste with salt and pepper.
  4. Top with parmesan cheese if desired.
