Asian Pear Slaw

Ingredients:

½ inch knob fresh ginger, finely grated
2 tablespoons lime juice, freshly squeezed
2 tablespoons rice vinegar
2 large 20th Century Asian pears, peeled and julienned
2 large stalks celery, julienned
¼ cup fresh cilantro leaves, finely chopped
2 scallions, thinly sliced
¼ teaspoon Thai chili pepper or favorite hot pepper, minced (optional)

Directions:

  1. Whisk together the ginger, lime juice and rice vinegar in a large bowl.
  2. Add the remaining ingredients and toss to coat. Let stand for a few minutes before serving.
