Arugula Pesto

Ingredients:

4 cups washed and dried organic arugula

1 clove of garlic

¼ cup olive oil

¼ cup pumpkin seeds

½ c. grated parmesan (optional)

Sea salt and pepper

Directions:

  1. Place all ingredients except of cheese in a food processor or Vitamix blender and pulse until almost smooth. Then add cheese (optional) . Taste for seasoning and add salt and pepper.
