Arugula Kale Salad

Ingredients:

2-3 stalks of arugula rapini, finely chopped
half a bunch of kale, finely chopped
1 shredded beet.

Directions:

  1. Mix together with a dressing of your choice—try this one:
  2. 1-2 tbsp Apple cider vinegar, 1/2 tsp mustard, 3-4 tbsp olive oil, salt and pepper to taste. The mustard acts as a binding agent for the oil and vinegar—tahini or miso also works well for that purpose.
  3. Chopped walnuts and blue cheese are also nice additions.
