Grilled Apples with Mozzarella and Parsley


8-10 apples
8 ounces fresh baby mozzarella balls, sliced thin
1 cup parsley, stems removed
Juice of 1 lemon
2 tablespoons olive oil, divided


  1. Heat your grill on high. Slice apples into 1/2 inch thick rings. Scoop out any seed with a spoon and toss apples with the lemon juice, 1 tablespoon oil, and a pinch of salt and pepper.
  2. Grill for about 3-5 minutes.
  3. Fill apples and place fresh parsley leaves on each apple ring, top with a couple slices of mozzarella and closed the BBQ lid.
  4. Grill for another 3-5 minutes. Carefully remove the apple slices
  5. Drizzle with a bit more oil and serve warm.
