Summer Veggie Flatbread Pizza


3 mixed sweet peppers (1 Glow, 1 Aura, 1 Corinto Rosso) halved and seeded
garlic olive oil
4 whole wheat naan flatbreads
1 pint of grape tomatoes, sliced in thirds
1 red onion, thinly sliced
½ cup crumbled feta cheese
fresh basil, thinly sliced


  1. Preheat BBQ to 350 degrees. Hot sear the pepper halves for 2 to 3 minutes until grill marks form, set aside to cool. Once cool, dice the grilled peppers.
  2. Brush the flatbreads with garlic oil.
  3. Begin topping the pizzas with the grilled peppers, tomatoes, red onion and the crumbled feta. Avoid overloading the flatbread with toppings.
  4. Place the flatbreads on the top rack of the BBQ and close the lid, cook for 5 minutes.
  5. Remove from the BBQ and top with the fresh basil.
  6. Cut each pizza into 4 pieces.
