Cilantro leaves spoil quickly when removed from the plant, and unfortunately loses its aroma and flavor when dried or frozen, so it is best consumed fresh. To keep cilantro fresh, refrigerate standing upright in a tall glass, like a bouquet of flowers, and loosely cover with a plastic bag. Since cilantro is so perishable and will quickly break down, storing it in the crisper drawer in a plastic bag will show just how fast it can turn to mush.
