Spicy Watermelon Salad with Pickled Onions


3/4 cup red wine vinegar
1 Walla Walla onion, sliced in thin rings
8 cups Yellow Sunshine watermelon, seeded and cubes
1/4 cup lime juice
2 tablespoons Anaheim pepper, halved, seeded and sliced
1 tablespoon fresh basil, chopped
1 tablespoon fresh lemon balm, chopped
4 ounces feta cheese, crumbled
1/4 teaspoon cayenne pepper


  1. Heat vinegar is a small sauce pan over high heat until boiling. Add the onion and cook, turning as needed, for about 5 minutes. Spoon onion out of pan and let cool slightly. Roughly chop.
  2. Mix the rest of ingredients in a large bowl. Add onion and gently mix to combine.
