Sauteed Beet Salad with Mixed Herbs and Goat Cheese


3-4 peeled beets, medium to large
3 Tbsp. olive oil
1/2 tsp sea salt
1 C cooked chickpeas
1/2 C goat cheese, crumbled
2 T mixed herbs (basil, chives, thyme, ect.), chopped
1/2 T pepper


  1. Cut off the tops and bottoms of the beets. Wash and peel the beets . Cut into small cubes or slices.
  2. In a large sauté pan heat oil over medium. Add the beets and salt. Sauté beets until tender, about 10-13 minutes.
  3. Add the chickpeas to the pan. Sauté for about 2 minutes, or just until the chickpeas have been thoroughly warmed.
  4. Remove pan from heat and transfer beet and chickpea mixture into a bowl.
  5. Add the goat cheese and sprinkle with pepper and fresh herbs. Toss, serve and enjoy!
  6. *Can be enjoyed warm or cold
