Kale & Pomegranate Salad


1 bunch kale, stemmed and leaves sliced

2 tablespoons lemon olive oil

1 tablespoon fresh lemon juice

½ teaspoon fresh ginger, grated

½ cup pomegranate seeds

2 tablespoons red onion, diced

¼ cup pecans, toasted and chopped

¼ cup goat cheese, crumbled (optional)

Coarse salt and pepper


  1. Rub kale with oil, lemon juice, and ginger until well coated.
  2. Add pomegranate seeds, red onion, and toss.
  3. Top with pecans and goat cheese.
  4. Season with coarse salt and pepper.
