Grilled Gem Salad


1 tablespoon shallot, minced
2 teaspoons balsamic vinegar
2 teaspoons sherry vinegar
3 tablespoons olive oil, plus some for brushing the lettuce
salt and pepper to taste
3 Little Gem lettuce heads, sliced in half from stem to stern
2 ounces feta or goat cheese, crumbled
¼ teaspoon crushed red pepper flakes


  1. Combine shallot and vinegars in a small bowl. Whisk in olive oil and season with salt and pepper to taste.
  2. Heat grill to medium and lightly oil the grate. Brush the lettuce with a little olive oil and grill for 1 to 2 minutes on either side until the lettuce is lightly charred.
  3. Plate lettuce cut-side up, drizzle with dressing, top with feta or goat cheese and sprinkle with crushed red pepper flakes, salt and pepper.
