Mixed Greens with Cucumbers, Peaches and Feta


1 shallot, minced
Sea salt
1 lemon, zested and juiced
2 tablespoons champagne vinegar

1 cucumber, halved lengthwise, thinly sliced crosswise
2-3 peaches, sliced ¾-inch wedges
Sea salt
4 ounces feta cheese crumbles
Salad mix
Handful of fresh basil leaves, torn if large
Handful of fresh mint leaves, torn if large
1 lemon, halved


  1. Place shallot in a small bowl and season with a big pinch of salt. Add lemon zest, lemon juice and vinegar to the bowl, toss to combine. Let sit for 10 minutes.
  2. Place cucumber and peaches in a serving bowl and season with salt. Add vinaigrette over and toss gently with your hands to coat.
  3. Add feta; season with salt and pepper. Serve over mixed greens and top salad with basil and mint and squeeze lemon over.
