Use as much green garlic you’d like to freeze and preserve
You may either freeze it whole or chopped. To freeze the stalks whole, take a frozen stalk of garlic out of the freezer and (while still frozen) grate some into whatever you’re making. Adding a whole stalk into homemade soup stock is also wonderful. Or you can also dice it first and then freeze. Add the frozen green garlic straight into your recipe without thawing. It softens as it thaws, so this works best in cooked recipes. It is best used in something being cooked.
