Golden Oyster Mushroom Zucchini Sauté


2 tablespoons olive oil
3 cups golden oyster mushrooms, rinsed and cut from base of fruiting body
3 tablespoons soy sauce
3 tablespoons Chinese cooking wine
1 tablespoon toasted sesame oil
2 cloves garlic, minced
Salt & pepper
3 cups zucchini, cubed into 1/2–inch pieces
1 cup with onion, minced


  1. Heat oil in a skillet over medium heat.
  2. Add mushrooms and sauté for about 5 minutes.
  3. Add the soy sauce, cooking wine and sesame oil and cook until the liquid has cooked off.
  4. Add the minced garlic and season with salt and pepper to taste.
  5. Add the zucchini and onion then sauté for another 3-5 minutes, just until crisp tender.
  6. Enjoy!
