Ginger Cucumbers & Peppers


¼ cup olive oil
¼ cup rice wine vinegar
1 tablespoon ginger, minced
2 teaspoons agave nectar
½-¾ teaspoon crushed red pepper
2 large Painted Serpent cucumbers, scrubbed, halved lengthwise, seeded and sliced
2 Gypsy peppers, seeded and sliced
1 Gathers Gold pepper, seeded and sliced
½ Cabernet onion, diced
½ cup basil, chopped


  1. Whisk the oil, vinegar, ginger, agave, and pepper flakes in a large bowl. Taste and season with salt.
  2. Add the cucumber, peppers, onion and basil to the bowl and toss to combine. Chill 10-15 minutes and serve.
