How to Freeze Fennel Bulbs

Ingredients:

Use as many fennel bulbs as you’d like to freeze.

Directions:

  1. Wash the bulb, removing stalks and leaves.
  2. Bring a pot of salted water to a boil.
  3. Cut the bulb into lengthwise quarters or crosswise 1-inch slices. Blanch the cut fennel pieces in boiling water for 30 seconds.
  4. Transfer the fennel pieces to a bowl of ice water until cool. Drain.
  5. Store in sealed bags or containers; freeze for 6 months. Use in recipes where the fennel bulb will be cooked- such as gratins, soups, and stews.
