Farm Stand Salad with Basil Vinaigrette


1 bag of spring mix
1 mini head of lettuce, chopped
½ bunch of radish, thinly sliced
½ cucumber, peeled, seeded and diced
1 scallion, finely chopped
1 squash blossom, finely chopped

1 small garlic clove, minced
1 cup packed basil leaves, finely chopped
1/4 cup extra-virgin olive oil
1 1/2 tablespoons Champagne vinegar
A pinch of salt and freshly ground black pepper


  1. Add salad ingredients in a medium size bowl and toss.
  2. In a mason jar add all of the dressing ingredients.
  3. Put the lid on and shake until all the ingredients have blended.
  4. Pour over salad and serve.
