Delicata Squash with Peppers & Arugula

If you like a little spice add 1-2 teaspoons diced Anaheim pepper when you add the other peppers.


1 delicata squash, cut lengthwise, seeded and thinly sliced
1 tablespoon extra-virgin olive oil
2 Stocky Roaster peppers, diced
1/2 medium onion, diced
2 cloves garlic, minced
1 teaspoon fresh winter savory, chopped
1/2 teaspoon chili powder
1/2 teaspoon cumin
Salt and freshly ground pepper
1 cup arugula


  1. Heat the olive oil in a large skillet over medium heat. Add the squash, cover, and cook for 5-8 minutes, stirring occasionally.
  2. Remove the cover and stir in the peppers, onion, garlic, and winter savory. Sauté for 3-4 minutes.
  3. Sprinkle with chili powder, cumin, salt and pepper.
  4. Stir in the arugula and cook until wilted. Serve!
