1 Delicata squash, ends cut off and cut lengthwise
2 tablespoons coconut oil, softened
2 teaspoons curry powder
Salt to taste
1 avocado, halved and seeded
½ lime, juiced
¼ teaspoon garlic powder
¼ teaspoon dried ginger powder
¼ cup cilantro, chopped
Directions:
Preheat the oven to 400 degrees. With a spoon scoop out the Delicata seeds. Turn over and lay flat side down and cut into ½-inch slices. Place on a baking sheet and rub with enough coconut oil to coat, curry powder and a pinch of salt. Spread flat, in a single layer, and bake for 20-30 minutes, flipping halfway
While squash is cooking, scoop out avocado and place in a blender or food processor. Add lime juice, garlic powder, ginger and pinch of salt.
Blend with 2 tablespoons of water and taste. Adjust seasoning as needed and add more water, 1 tablespoon at a time, to thin sauce to desired consistency.
Once squash is roasted to soft, drizzle with sauce and sprinkle with cilantro.
