Cucumber Melon Salad with Pickled Onions & Fresh Mozzarella


1/4 cup red onions, pickled

1 1/2 large cucumbers, peeled and sliced

1/2 small ripe melon, seeded and chopped

2 tablespoons pepitas, toasted

½ cup fresh mozzarella balls

¼ cup fresh basil leaves, torn

2 tablespoons olive oil

1 1/2 tablespoon red wine vinegar

Salt & pepper to taste


  1. Very thinly slice a small red onion and place in a small bowl (use a mandoline if you have one). Combine 1/2 cup apple cider vinegar, 1 cup warm water, 1 tablespoon sugar and 1 teaspoon salt in another bowl or cup, stir to dissolve. Pour the mixture over the onions and let sit for 30 minutes to 1 hour before using.
  2. Combine the cucumbers, melon, pickled red onions, pepitas, mozzarella and basil in a large bowl.
  3. Whisk together the olive oil, vinegar, salt and pepper in a small bowl. Pour the dressing into the large bowl and toss to combine.
  4. Season with more salt and pepper to taste.
