Cabbage Salad 2

Cabbage contains nutrients that can aid digestion, heal ulcers and help prevent cancer. Enjoy it raw in salads or cooked in stir fries.


1 head of cabbage, cut into thin slices
2 Tablespoons vinegar
1 cup chopped scallions
1 teaspoon honey
2 carrots, grated
1 teaspoon soy sauce


  1. In a small bowl combine vinegar, honey and soy sauce.
  2. In a second bowl add cabbage and a pinch of salt and mix well.
  3. Add the liquid mixture to the cabbage, mix and let stand for 5 minutes.
  4. Add scallions and carrot, mix and serve. (Can be made ahead and chilled.)
