Sautéed Green Beans, Shiitake Mushrooms and Cherry Tomatoes


1 pound green beans, ends trimmed and cut into 1-inch pieces
2 tablespoons butter
1 leek, trimmed and chopped
3 cloves garlic, minced
½ pound shiitake mushrooms, sliced
1 tablespoon fresh oregano, chopped
1 pint cherry tomatoes, halved
Salt & Pepper to taste


  1. In a large pot steam green beans until tender. Drain and set aside.
  2. Add 1 tablespoon butter to a large skillet over medium high heat and sauté leek and garlic until tender, about 2 to 3 minutes.
  3. Add 1 more tablespoon butter, mushrooms, oregano and sauté until tender.
  4. Stir in green beans and tomatoes until heated. Season with salt and pepper to taste.
