​Pasta with ​​Spigarello & Garlic Scapes


​12 oz. of your favorite pasta
2-4 tablespoons olive oil
1 small onion, chopped
1 bunch garlic scapes, ends trimmed and scapes chopped
1 bunch Spigarello, thick stems removed and leaves chopped
Salt and pepper to taste
Pinch chili flakes
2 tablespoons fresh oregano, chopped
½ cup crumbled goat cheese


  1. ​Boil 4-6 quarts of salted water. Add pasta and stir occasionally. Boil until pasta is just tender – refer to package directions for approximate time. Drain pasta.
  2. Meanwhile, heat oil in skillet over medium heat. Add onion and cook until soft and slightly brown. Add garlic scapes and cook
  3. 1-2 minutes. Add spigariello and a small amount of water, stir and cover to steam for 2-3 minutes.
  4. Add a pinch of salt, pepper, chili flakes and oregano and stir.
  5. Combine the spigariello with the cooked pasta and top with cheese.
